Lemon Chickpea Pasta + Life Update

Hey Raw Beauties!

I’m back! J It’s been quite a while and I have a lot of things to share with you! A lot of things had happened and I’m looking forward to a lot of things happening in the next few weeks and months of 2019.

For a start, me and my sister are watching LANY’s second concert in Manila! I won’t tell you which date of the three days we’re watching but it’s going to be from July 23- 25. I’m so excited!!! I’m inlove with their Malibu Nights album and have been a fan since they’ve released their ILYSB and Super Far songs a few years ago.

Are you a fan of LANY? Are you watching the concert too?

Paul’s my forever crush! He is just perfect! I wish I could meet him in person when he arrives in Manila soon!!

Also, would like to share with you! I met Inigo Pascual in one of our work events with Sun Life. I feel so blessed! He is such a great and humble guy! He even gave me a hug! I was so kilig. Here’s a photo of us just before he sang his new single, Kaakbay, a song he composed for Sun Life’s Lifetime Partnership campaign.

Apart from that, I will be celebrating my 6 months of working for Sun Life in the PR and Communications Department, just in case you didn’t know. J I can’t believe it has gone by so fast! So far, I’m loving my job and most especially the people that I work with. They’re smart, funny and entertaining most of the time. I find my job quite challenging but I know with hard work, perseverance and a little help, I could get by. J

Also, I would like to share with you one of my main goals this year. I’ve always been fascinated by Raw Vegan cuisine most especially the ones in Bali, Indonesia. I’ve always wanted to study and learn how to make raw vegan lasagna, raw vegan cheeses and spreads, and raw vegan desserts like cashew cheesecakes and all that.

I have found Sayuri Healing Food in Bali apart from Seeds of Life Bali and I’m contemplating on which school I’ll enroll for either a 4 day course or a 2 week course. I’m thinking of enrolling first in a 4 day course , first due to budget restraints, the 2 week course runs at almost Php 100,000 plus and the 4 day course is only at Php 20,000, that is without airfare and lodging. Should you know someone who has taken the courses either in Sayuri Healing or in Seeds of Life Bali please let me know so I can compare and ask them about their experiences and see what’s fit for me and my working budget.

There you go! Those are my mini life updates to you, Raw Beauties! And now, I’m about to share with you a newly discovered recipe that I made just a few days ago while I was experimenting on what to bring for lunch at work.

Lemony Chickpea Vegeroti Pasta

Makes 5 servings J

Ingredients:

Half a bag of vegeroti pasta, cooked and drained

Contadina’s Napoletana Pasta Sauce

½ can of chickpeas

2 whole onions, chopped

Olive oil 3 tbsp

Juice of 1 lemon

Himalayan salt, to taste

Directions:

  1. Heat up your large pan. Put Olive oil.

  2. When hot enough, sautee chopped onions until golden brown.

  3. Add ½ can of chickpeas for a few minutes and cook.

  4. Place your pasta sauce in the pan. Add the lemon juice.

  5. Sprinkle Himalayan salt. Let the sauce simmer for 5-10 minutes.

  6. Taste the sauce, add more salt if needed.

  7. Add in your vegeroti spiral pasta and equally combine the sauce with the pasta.

  8. Serve.
