The Best Vegan (And Gluten Free) Chocolate Chip Cookie Recipe

Christmas went by fast, and New Year's is coming in faster! Aahhhh! It just went by like a thief! I'm writing this blog at exactly 9:36 in the morning,in the 27th of December here in my room before we go to the dentist and buy some charms for my Floating Locket Necklace. :) I'm so excited! It would be the perfect gift that I'll receive from my mom this Christmas!

And I know you are all so busy with all the New Year's preparations like the food, the fireworks and everything else you need so I thought of something that could help you ease in to the coming last holiday of 2018!

My favorite and the best Vegan and Gluten Free Cookie Recipe of all time!

This is a Raw Beauty Original Recipe and beware it becomes such a big hit to parties with families and friends so you better get prepared with an extra batch!

I won't hold you for so long so here you go!

Vegan and Gluten Free Chocolate Chip Cookie Recipe

Ingredients

1 tbsp chia seeds soaked with 3 tbsp of water

1 tbsp of flaxseed poweder soaked with 3 tbsp of water

6 tbsp of water/ non dairy milk ofchoice

4 tbsp of VIRGIN COCONUT OIL

3/4 cup of brown sugar/ muscovado sugar

1/2 cup of almond butter

2 tsp of vanilla extract

3 cups of almond flour

1 tsp of baking soda

1tsp salt

1 cup semi sweet chocolate chips

Directions

1. Preheat oven at 375 degrees Farenheit for 10 minutes. ( after refrigerating the dough)

2. Combine all dry ingredients, almond flour, baking soda and salt.

3. Whisk the coconut oil with sugar and vanilla extract until mixed all together.

4. Pour in the wet mixture to the dry mixture. Add the chia and flax seed water mixture and the liquid of choice. Combine properly.

5. Fold in the chocolate chips. Refrigerate the dough for at least an hour.

6. Roll into golf size balls and place in the oven with a greased parchment paper. You may use coconut oil for greasing.

7. Bake 15 minutes till golden brown.
