You, Raw Beauty You!

Your wish is finally granted as I’m finally sharing the recipe for my Peanut Butter & Jelly Oat Square Pudding that I originally intended to sell for The Raw Beauty Project. Given that I’ve been feeling immensely generous lately, I’ve decided to share it with you.

This recipe is all of the deliciousness listed below:

Fudgy, creamy, peanut buttery and yes healthy

Energy boosting and loaded with lots of day brightening Jelly

A Perfect Snack/ Dessert Recipe for a Raw Beauty

Fiber Packed & Protein Rich with Oatmeal and Peanut Butter

And yes, super delicious even your non vegan friends would totally die for!!!

Cause when Peanut Butter and Jelly combines - you'll be oh so divinely inclined!!

Peanut Butter & Jelly Oat Square Pudding

Serves 8

Ingredients:

2 cups oat flour ( or 1 ¾ cup + ¼ cup protein powder )

1/3 cup muscovado sugar

1 cup banana puree ( pure mashed bananas )

¼ cup olive/coconut oil

½ cup coconut milk

½ cup Peanut Butter

1 tsp apple cider vinegar

¼ tsp salt

1 tsp baking powder

Strawberry jam ( for dollops and to layer )

For the oat crumble:

¼ cup sugar

5 tsp oat flour

2 tbsp coconut oil

Directions:

1. Preheat your oven at 350 F for 10 minutes while you prepare all the ingredients needed.

2. Whisk together the banana puree, muscovado sugar and oil until everything is well incorporated.

Combine the flour, salt and baking powder on a separate bowl with a whisk as well.

3. Sift your dry mixture into the puree, then with a wooden spatula, begin to fold until mixture becomes lumpy.

4. Slowly add the coconut milk, followed by the apple cider vinegar. Fold once more.

5. Pour over half the mixture into a prepared loaf pan, then place tablespoons of strawberry jam uniformly or in any creative manner that you desire. J Afterwhich, pour the remaining mixture. Here’s another option for those who like just the right amount of jam on these super delicious pudding bars: Pour everything over into your pan, then spread a thin layer, about half a cup of jam to cover.

6. Either way, generously sprinkle the oat crumble on top, making all sides are covered to get that crunchy, and yes, crumbly texture. This is such a beautiful and delicious sight – especially with the strawberry jelly underneath.

7. Bake for 26-32 minutes up until the crumble becomes a deep brown color and nothing sticks with the toothpick.

Let it cool for about an hour. You can enjoy them warm or better yet, place them first on the fridge. They taste delish either way: warming it up and serving with a chilly Vanilla Coconut Milk Ice Cream, or enjoy them as they are for Pre or Post Workout Snack!
